Aurora Kusina was inspired by Amber’s mum 'Aurora' who grew up in Tondo, Manila, and came to the UK in the 1970’s.

Aurora was an incredible cook and there was nothing she loved more than seeing people enjoy her food. Now Amber & her husband, Ross, carry her traditions on by sharing their version of her dishes with you.

You can regularly find them at Bristol Market serving up some Filipino favourites, or at their very own restaurant based in Shepton Mallet.

Before I thought of this project, a very good friend, Janet, said to me that what’s unique about Yalham Hayes is me. But this seems true for any business, it is the main person who brings the most depth, personality and character to the brand.  Janet explained to me that more than these, I bring with me an experience of another culture,  another unique expression of nature in floral design.

So, I know that most of you know that I was born in Manila and although now I’ve lived in England for 17 years I am, always will in many many places Filipino! And with my madness, I reflected on this and remembered that I’ve always wished for a day when there can be a very long table out in the field where we are all sat together.

I had this picture in my head where we can all enjoy just looking at the flowers while we ate lush food and smiled and giggled and had a drink or two.

This is ‘Kain na’ --- a sign on Aurora Kusina’s wall at her quaint little restaurant in Shepton Mallet. It is Tagalog for, literally,

“Come on let’s eat, now!”

or perhaps in English, this is how you say, “Food is ready!”.

‘Kain na’ two words with three syllables. The English sentence version doesn’t quite capture all the undertones.

In Filipino, it means so much more and it’s making me teary just remembering what they all are:

I’ve been cooking the whole morning, perfecting this dish for you. Now that it’s finished, it’s for us. Please, please share it with me.

Let’s eat all the food now, so they don’t get cold. (And yet it’s never cold in the Philippines)

You look like you need some love.  Have some food, right now (albeit, sweetly).

Please come and join us as we celebrate the flower field with absolutely delicious Filipino food.

I cannot wait to see you all here.
